Vanilla Berry Chia Pudding

Need a quick and healthy breakfast recipe to get you through your busy week?

This simple chia pudding recipe will do the trick!

If you’re like me, (and most people in the world these days), you lead an incredibly busy life. We do our best to find ways to save time wherever we can… and a lot of the time that means skipping breakfast before heading to the office, or wherever it is that we need to be that morning.

Although I don’t eat breakfast very often these days (I’m currently trying out intermittent fasting), on the days that I do, I need something easy. This chia pudding is exactly that. You can make it the night before, giving yourself the extra time in the morning to do more important things rather than worrying about what to make for breaky, and you can take it to go if need be!

On top of this recipe taking no time or effort at all, it is vegan, paleo, low FODMAP, keto-friendly, and incredibly nutritious. It is super high in fiber and protein (chia seeds are one of the best sources of fiber in the world), low in carbs (for all my keto peeps), and great for your gut flora! Who doesn’t want a happy tum?

When it comes to the berry puree, use what ever berries your little heart desires! Find something fresh from your local farmers market and have some fun experimenting with flavours! In my case, I was able to get my hands on some local loganberries and I could not be more thrilled.

Feel free to double this recipe and keep your pudding in the fridge for meals and snacks throughout the week!

Vanilla Berry Chia Pudding

Makes 1-2 servings (depending on how hungry you are!)

Keeps for up to 1 week

BERRY PUREE INGREDIENTS:

  • 1 cup berries of your choice (I used loganberries)

  • Sweetener of choice, to taste (I used 1 tsp raw honey)

CHIA PUDDING INGREDIENTS:

  • 1 cup almond milk

  • 3 tbsp chia seeds

  • 1 tsp vanilla

DIRECTIONS:

  • In a bowl, add your almond milk, chia seeds and vanilla. Whisk until combined and pour into desired servings jar(s) - set aside in the fridge to set, stirring occasionally as it thickens*

  • While the chia pudding is setting, place your berries and sweetener into a food processor and puree til smooth

  • Once the pudding has set, pour your berry puree over top and place it back in the fridge to chill until you’re ready to eat!

*Feel free to forget about your pudding and let it set overnight. However it only takes a couple hours to set fully - it’s totally up to you!

When you’re ready to chow down, feel free to top off your pudding with some extra goodies! In my case, I used 1 tbsp hazelnut almond butter and cacao nibs - yummo!!
