Chocolate Cardamom Chia Pudding
You’re probably thinking, chocolate and cardamom...what a weird combination.
Well I am here to tell you that these two ingredients actually compliment each other VERY well. You’ll have to trust me on this one.
For this recipe I used a combination of oat and coconut milk to create the creamiest, most decadent chia pudding to date. This is a treat that makes a great dessert, but can also be a nutritious (and very fibrous) breakfast or snack. I used maple syrup as my sweetener, but you can always use honey or a liquid sugar substitute like stevia if that’s more up your alley.
Not only does cardamom taste great, it also has many health benefits such as:
Relieves coughs & colds
Helps relieve stomach problems like indigestion, gas and constipation
Can prevent bad breath & improve oral hygiene
Boosts blood circulation, especially to the lungs
Has warming properties that are soothing to the body
Chocolate Cardamom Chia Pudding
Serves 2
INGREDIENTS:
1 cup full fat coconut milk
1 cup unsweetened oat milk
6 tbsp chia seeds
4 tbsp unsweetened cacao powder
1 tbsp maple syrup (or sugar-free substitute)
3/4 tsp cardamom powder
DIRECTIONS:
In a medium sized bowl, add all your ingredients and whisk until well combined, adjusting sweetness to suit you. Cover and let set in the fridge
Check on your pudding every 30 minutes or so, give it a good whisk to remove all large clumps
Let it set for 3 hours or leave it overnight
Transfer to serving dishes and top with fresh fruit and/or some coconut whipped cream
