Chocolate Cardamom Chia Pudding

You’re probably thinking, chocolate and cardamom...what a weird combination.

Well I am here to tell you that these two ingredients actually compliment each other VERY well. You’ll have to trust me on this one.
For this recipe I used a combination of oat and coconut milk to create the creamiest, most decadent chia pudding to date. This is a treat that makes a great dessert, but can also be a nutritious (and very fibrous) breakfast or snack. I used maple syrup as my sweetener, but you can always use honey or a liquid sugar substitute like stevia if that’s more up your alley.


Not only does cardamom taste great, it also has many health benefits such as:

  • Relieves coughs & colds

  • Helps relieve stomach problems like indigestion, gas and constipation

  • Can prevent bad breath & improve oral hygiene

  • Boosts blood circulation, especially to the lungs

  • Has warming properties that are soothing to the body

Chocolate Cardamom Chia Pudding

Serves 2

INGREDIENTS:

  • 1 cup full fat coconut milk

  • 1 cup unsweetened oat milk

  • 6 tbsp chia seeds

  • 4 tbsp unsweetened cacao powder

  • 1 tbsp maple syrup (or sugar-free substitute)

  • 3/4 tsp cardamom powder


DIRECTIONS:

  • In a medium sized bowl, add all your ingredients and whisk until well combined, adjusting sweetness to suit you. Cover and let set in the fridge

  • Check on your pudding every 30 minutes or so, give it a good whisk to remove all large clumps

  • Let it set for 3 hours or leave it overnight

  • Transfer to serving dishes and top with fresh fruit and/or some coconut whipped cream
